3-ingredient depression era icebox cake

This old-fashioned Depression-era icebox cake is a simple, no-bake dessert made with just three affordable ingredients. Families loved recipes like this because they were inexpensive, easy to make, and delicious.

Ingredients

  • 2 cups heavy whipping cream
  • 2 tablespoons sugar
  • 1 package chocolate graham crackers (about 9 ounces)

Instructions

Step 1: Whip the Cream

In a large bowl, beat the heavy cream and sugar until stiff peaks form.

Step 2: Create the First Layer

Spread a thin layer of whipped cream on the bottom of a loaf pan or 8×8-inch dish.

Step 3: Layer the Crackers

Place a layer of graham crackers over the cream, breaking crackers as needed to fit.

Step 4: Repeat the Layers

Spread a layer of whipped cream over the crackers. Continue alternating crackers and whipped cream until all ingredients are used, ending with whipped cream on top.

Step 5: Chill

Cover and refrigerate for at least 6 hours, preferably overnight. The crackers will soften into cake-like layers.

Step 6: Serve

Slice and serve cold. The texture will be soft, creamy, and reminiscent of a classic chocolate cake.

Tips

  • For a true Depression-era feel, keep the recipe plain and simple.
  • Chill overnight for the best texture.
  • A dusting of cocoa powder on top is optional if you have extra ingredients on hand.
