Classic Potato Salad

Potato Salad is a timeless side dish that belongs at every picnic, cookout, and family gathering. Creamy, tangy, and packed with tender potatoes and simple seasonings, it’s the kind of comfort food that tastes even better the next day.

Ingredients

  • 2½ pounds russet or Yukon Gold potatoes, peeled and cubed
  • 3 large eggs
  • ¾ cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 tablespoon apple cider vinegar or pickle juice
  • ½ cup celery, finely diced
  • ¼ cup red onion, finely diced
  • ¼ cup sweet pickle relish
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Paprika for garnish

Preparation

Place cubed potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook for 10–12 minutes, or until fork-tender but not mushy. Drain and let cool.

Meanwhile, boil the eggs for 10 minutes, then cool, peel, and chop.

In a large bowl, mix mayonnaise, mustard, vinegar (or pickle juice), salt, and pepper until smooth.

Add cooled potatoes, chopped eggs, celery, onion, and relish. Gently fold until evenly coated.

Taste and adjust seasoning if needed.

Cover and refrigerate for at least 1 hour before serving to allow flavors to blend.

Sprinkle with paprika before serving.
