French Onion Soup is a timeless classic known for its deeply caramelized onions, rich broth, toasted bread, and bubbling layer of melted cheese on top. What begins as simple ingredients transforms into a savory, comforting dish full of depth and warmth.

Ingredients

  • 4 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional, helps caramelization)
  • 2 cloves garlic, minced
  • ½ cup dry white wine (optional)
  • 6 cups beef broth (good quality)
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • 1 baguette, sliced
  • 1½–2 cups shredded Gruyère cheese (or Swiss)

Preparation

In a large heavy pot over medium heat, melt butter with olive oil.

Add sliced onions, salt, and pepper. Cook slowly, stirring frequently, for 30–40 minutes until onions are deeply golden and caramelized. Add sugar if needed to encourage browning.

Stir in garlic and cook for about 1 minute.

Pour in white wine (if using) and simmer for 2–3 minutes, scraping up browned bits from the bottom.

Add beef broth and thyme. Bring to a gentle simmer and cook for 15–20 minutes to develop flavor. Adjust seasoning if needed.


Prepare the Bread and Cheese

While the soup simmers, toast baguette slices in the oven until lightly crisp.

Ladle soup into oven-safe bowls. Place toasted bread on top of each bowl and generously cover with shredded Gruyère cheese.

Broil for 2–4 minutes, until cheese is melted and bubbly with golden spots.
