Cherry Cheesecake Bars

Ingredients

For the Crust:

  • 2 cups graham cracker crumbs
  • ½ cup (1 stick) unsalted butter, melted
  • ¼ cup granulated sugar

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream

For the Topping:

  • 1 (21 oz) can cherry pie filling

Preparation

Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper and lightly grease.

Make the Crust:

In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.

Press evenly into the bottom of the prepared pan.

Bake for 8–10 minutes, then set aside to cool slightly.


Make the Filling:

In a large bowl, beat softened cream cheese and sugar until smooth and creamy.

Add eggs one at a time, mixing just until combined. Stir in vanilla and sour cream.

Pour filling over the pre-baked crust and spread evenly.

Bake for 30–35 minutes, until center is set but slightly jiggly.

Remove from oven and cool completely.


Add the Topping:

Spread cherry pie filling evenly over the cooled cheesecake layer.

Refrigerate for at least 2 hours before slicing into bars.
