Blueberry Cream Cheese Loaf

This blueberry cream cheese loaf is soft, moist, and bursting with juicy blueberries, layered with a rich, creamy swirl that makes every slice irresistible. It’s perfect for breakfast, brunch, or dessert.


🧺 Ingredients

For the loaf:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (115 g) butter (softened)
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream (or Greek yogurt)
  • 1 cup fresh or frozen blueberries

For the cream cheese layer:

  • 200 g cream cheese (softened)
  • ¼ cup sugar
  • 1 egg
  • ½ tsp vanilla extract

🍳 Instructions

  1. Preheat oven to 180°C (350°F) and grease a loaf pan.
  2. Mix dry ingredients
    Combine flour, baking powder, baking soda, and salt.
  3. Cream butter & sugar
    Beat until light and fluffy.
  4. Add eggs & vanilla
    Mix in eggs one at a time, then vanilla.
  5. Add sour cream & dry mix
    Alternate adding dry ingredients and sour cream.
  6. Fold in blueberries
    Gently mix to avoid crushing them.
