Seeded no knead jar bread

Seeded No-Knead Jar Bread is a rustic homemade bread packed with texture and flavor from mixed seeds and baked with almost no effort. The dough comes together in minutes, rises slowly for a soft airy interior, and bakes into a crusty golden loaf. Perfect for beginners and ideal for breakfast, sandwiches, or serving with soup.

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon instant yeast
  • 1 1/2 cups warm water
  • 2 tablespoons sunflower seeds
  • 2 tablespoons sesame seeds
  • 1 tablespoon flax seeds
  • 1 tablespoon pumpkin seeds
  • 1 teaspoon honey or sugar (optional)

For Topping

  • Extra mixed seeds
  • Light flour for dusting

Instructions

  1. In a large bowl or jar, combine flour, salt, yeast, and all the seeds.
  2. Add warm water and honey if using. Stir with a spoon until a sticky dough forms. No kneading is needed.
  3. Cover the bowl or jar with plastic wrap or a lid and let the dough rise at room temperature for 12–18 hours.
  4. After rising, the dough should look bubbly and soft.
  5. Preheat oven to 450°F (230°C). Place a Dutch oven or covered baking pot inside to heat for about 30 minutes.
  6. Transfer dough onto a floured surface. Fold it gently a few times to shape into a round loaf.
  7. Sprinkle extra seeds on top.
  8. Carefully place the dough into the hot pot. Cover with lid.
  9. Bake covered for 30 minutes, then uncover and bake another 10–15 minutes until deep golden brown.
  10. Let cool before slicing.

Tips

  • Use any seed mix you enjoy.
  • For extra flavor, add oats or chopped nuts.
  • The long rise creates a better texture and flavor naturally.

Store wrapped at room temperature for up to 3 days or freeze slices for later use.
