Ingredients
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon instant yeast
- 1 1/2 cups warm water
- 2 tablespoons sunflower seeds
- 2 tablespoons sesame seeds
- 1 tablespoon flax seeds
- 1 tablespoon pumpkin seeds
- 1 teaspoon honey or sugar (optional)
For Topping
- Extra mixed seeds
- Light flour for dusting
Instructions
- In a large bowl or jar, combine flour, salt, yeast, and all the seeds.
- Add warm water and honey if using. Stir with a spoon until a sticky dough forms. No kneading is needed.
- Cover the bowl or jar with plastic wrap or a lid and let the dough rise at room temperature for 12–18 hours.
- After rising, the dough should look bubbly and soft.
- Preheat oven to 450°F (230°C). Place a Dutch oven or covered baking pot inside to heat for about 30 minutes.
- Transfer dough onto a floured surface. Fold it gently a few times to shape into a round loaf.
- Sprinkle extra seeds on top.
- Carefully place the dough into the hot pot. Cover with lid.
- Bake covered for 30 minutes, then uncover and bake another 10–15 minutes until deep golden brown.
- Let cool before slicing.
