Crispy Cheesy Broccoli Bites are the perfect savory snack or side dish. Packed with tender broccoli, gooey cheese, and a crispy golden coating, these little bites are flavorful, satisfying, and family-friendly. They’re great as appetizers, lunchbox snacks, or an easy way to enjoy more vegetables.

Ingredients

  • 3 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 2 large eggs
  • 3/4 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons chopped parsley (optional)
  • Cooking spray or olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Steam or boil the broccoli until tender, about 4–5 minutes. Drain well and finely chop.
  3. In a large bowl, combine chopped broccoli, cheddar cheese, parmesan cheese, eggs, breadcrumbs, garlic powder, onion powder, salt, pepper, and parsley.
  4. Mix until fully combined.
  5. Scoop small portions and shape into bite-sized balls or patties.
  6. Place on the prepared baking sheet and lightly spray with cooking spray or drizzle with olive oil.
  7. Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.
