CABBAGE AND EGGS

Cabbage and Eggs is a simple, old-fashioned skillet meal that’s hearty, budget-friendly, and surprisingly satisfying. Tender sautéed cabbage pairs perfectly with fluffy eggs, creating a savory dish that works for breakfast, lunch, or even a light dinner.

This humble recipe has been a staple in many kitchens for generations because it’s affordable, nourishing, and quick to make.

Yield and Timing

Serves 3–4 people
Prep time: 10 minutes
Cook time: 15 minutes

Ingredients

  • ½ head green cabbage, thinly sliced
  • 4–5 large eggs
  • 2 tablespoons butter or olive oil
  • ½ small onion, thinly sliced (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder (optional)
  • Optional: red pepper flakes or smoked paprika

Preparation

Heat butter or oil in a large skillet over medium heat.

Add sliced onion (if using) and cook for 2–3 minutes until softened.

Add the sliced cabbage, salt, pepper, and garlic powder. Cook, stirring occasionally, for 8–10 minutes, until the cabbage is tender and lightly golden.

Reduce heat slightly. Crack the eggs directly into the skillet or whisk them in a bowl first for a scrambled texture.

Stir gently and cook until the eggs are set but still soft, about 3–4 minutes.

Taste and adjust seasoning as needed.
