Ingredients

  • 4 oz cream cheese, softened

  • 2 tablespoons butter

  • ¼ cup milk

  • 3 large eggs, separated

  • ¼ cup granulated sugar

  • ½ cup cake flour (or all-purpose flour sifted)

  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt

Preparation

Preheat the Oven

Preheat oven to 320°F (160°C).

Line a muffin tin with paper liners.

Melt the Base

In a heatproof bowl, melt cream cheese, butter, and milk together (microwave or double boiler).

Whisk until smooth.

Let cool slightly.

Add Egg Yolks

Whisk in egg yolks and vanilla extract until combined.

Sift in flour and salt, then mix until smooth.

Make the Meringue

In a separate bowl, beat egg whites until foamy.

Gradually add sugar and continue beating until soft peaks form.

Fold

Gently fold the meringue into the batter in batches.

Be careful not to deflate the mixture.

Fill and Bake

Pour batter into muffin liners about ¾ full.

Place the muffin tin in a larger pan and add hot water halfway up the sides (water bath).

Bake for 20–25 minutes until set but still slightly jiggly.

Cool

Turn off the oven and leave the door slightly open for 10 minutes.

Remove and cool completely.

Dust with powdered sugar before serving.
