🧺 Ingredients

  • 500 g fresh spinach (or frozen, drained well)
  • 200 g feta cheese (crumbled)
  • 1 small onion (chopped)
  • 2 eggs
  • 2 tbsp olive oil
  • 1 tsp dried oregano or dill
  • Salt and black pepper (to taste)
  • 6–8 sheets phyllo pastry (or puff pastry as alternative)
  • 2 tbsp melted butter or olive oil (for brushing)

🍳 Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cook spinach mixture
    In a pan, heat olive oil and sauté onion until soft. Add spinach and cook until wilted (or heated through if frozen). Let cool.
  3. Prepare filling
    Mix spinach with feta, eggs, herbs, salt, and pepper.
