Ingredients

- 1–2 tablespoons fresh rosemary, finely chopped (or 1 teaspoon dried)

Preparation
In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
Add flour, salt, olive oil, and chopped rosemary. Stir until a shaggy dough forms.
Turn the dough onto a lightly floured surface and knead for 8–10 minutes, until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a clean towel, and let rise in a warm place for 1–1½ hours, or until doubled in size.
Punch down the dough and shape into a round loaf. Place on a parchment-lined baking sheet or in a lightly floured Dutch oven. Cover loosely and let rise for another 30 minutes.
Preheat oven to 425°F (220°C).
If desired, lightly score the top of the loaf with a sharp knife and sprinkle with coarse sea salt.
Bake for 35–40 minutes, until golden brown and the loaf sounds hollow when tapped on the bottom.
Allow to cool on a wire rack before slicing.
