Creamy “Marry Me” Chicken Soup is a cozy, flavor-packed soup inspired by the famous Marry Me Chicken recipe. Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 2 cups cooked shredded chicken
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup small pasta or diced potatoes
  • 2 cups fresh spinach
  • Fresh basil or parsley for garnish

Instructions

  1. In a large pot, heat butter and olive oil over medium heat.
  2. Add diced onion and cook until softened, about 4–5 minutes.
  3. Stir in garlic, sun-dried tomatoes, Italian seasoning, paprika, salt, and pepper. Cook for 1 minute.
  4. Pour in chicken broth and bring to a gentle boil.
  5. Add pasta or potatoes and cook until tender.
  6. Stir in shredded chicken, heavy cream, and parmesan cheese.
  7. Reduce heat to low and simmer for 5 minutes until creamy and well combined.
  8. Add spinach and cook just until wilted.
  9. Serve warm topped with fresh basil or parsley and extra parmesan if desired.

  • For extra richness, use half-and-half plus a little cream cheese.
