Ingredients

  • 2 cups pecan halves
  • 20–24 soft caramels, unwrapped (about 10 oz)
  • 2 tablespoons heavy cream or milk
  • 1½ cups semi-sweet chocolate chips
  • 1 teaspoon coconut oil or butter (optional, for smooth melting)
  • Optional: sea salt flakes for topping

Preparation

Line a baking sheet with parchment paper.

Arrange pecan halves in small clusters of 3–4 pecans each, forming a “turtle” shape.

In a microwave-safe bowl, melt the caramels with heavy cream in 30-second intervals, stirring between each, until smooth.

Spoon about 1 tablespoon of melted caramel over each pecan cluster.

Allow caramel to cool slightly while preparing the chocolate.

Melt chocolate chips (with coconut oil if using) in 20–30 second intervals, stirring until smooth.

Spoon melted chocolate over each caramel cluster, covering most of the caramel while allowing some pecans to show.

Sprinkle lightly with sea salt if desired.

Refrigerate for 30–45 minutes, or until fully set.
